Shinriki rice is an heirloom rice variety local to Kumamoto brought back by just one grain from near extinction, and we are eternally reaping the benefits. We don't have a ton of sake available from Kyushu, but this stunner from Kumamoto's Chiyonosono is just fantastic. A rich, mellow, full-flavored sake with fresh-cut green grass aromas and hints of tropical fruits on the nose. This is certainly not a fuddy-duddy stuffy ginjo - sure, this has refined aromas and enough subtlety and class for the uber-fussy, but Sacred Power also has these amazing aromas of lemongrass and cooked cream that we just can't get enough of when it's open in front of us. This is a staff favorite!
